# What You'll Need:
→ Vegetables
01 - 2 large cucumbers, thinly sliced (peel optional)
02 - 2 green onions (scallions), thinly sliced
→ Dressing
03 - 1/2 cup plain Greek yogurt or sour cream
04 - 2 tablespoons mayonnaise
05 - 1 tablespoon lemon juice (about 1/2 lemon)
06 - 1 teaspoon Dijon mustard
07 - 1 clove garlic, finely minced
08 - 1 tablespoon rice vinegar
09 - 1/2 teaspoon kosher salt
10 - 1/4 teaspoon freshly ground black pepper
→ Seasoning & Garnish
11 - 2 tablespoons everything bagel seasoning
12 - 1 tablespoon fresh dill, chopped (optional)
# How to Make It:
01 - Wash the cucumbers and, if desired, peel them. Thinly slice the cucumbers and slice the green onions. Transfer both to a large mixing bowl and set aside.
02 - In a separate bowl, whisk together the Greek yogurt (or sour cream), mayonnaise, lemon juice, Dijon mustard, minced garlic, rice vinegar, kosher salt and black pepper until smooth and emulsified.
03 - Pour the dressing over the cucumbers and green onions. Toss gently with salad tongs or a large spoon until all pieces are evenly coated.
04 - Evenly sprinkle the everything bagel seasoning over the dressed vegetables and toss lightly to distribute the crunchy seasoning without overworking the cucumbers.
05 - Fold in chopped dill if using. Serve immediately to retain maximum crispness, or chill for about 10 minutes to allow flavors to meld before serving.
